It has always been a dream of Chef Donato to produce fresh mozzarella in Hawaii to help people understand the difference between a freshly made product as opposed to a product shipped in from the Mainland or Italy that may already be one week old.
In Puglia, Donato’s hometown, as well as the rest of Southern Italy, mozzarella is eaten fresh, daily!
Being a pioneer in making mozzarella in Hawaii since 1985, he would like to further the production by establishing the first factory to produce fresh mozzarella in Hawaii. Chef Donato received a letter from the Italian Console to acknowledge his excellence in representing traditional Italian cuisine in Hawaii. Read about it here.
The Market/Cafe serves as a neighborhood gathering for authentic Italian sandwiches, Pinsa Romana, pastry and coffee.
